Eggless dates & Walnut Cake

Ingredients:

Dates – 20 (5oz or 150g)
Water – approx 1/2 cup, for soaking
Walnuts – 1/4 cup (30 g), chopped
Sweetened Condensed Milk – 14oz can (396g)
Unsalted Butter – 1 stick (4oz or 113g)
Baking Soda – 1 1/2 tsp
Baking Powder – 1 tsp
All-purpose Flour – 1 1/4 cups (183 g)

Method:

1. Soak the Dates in warm water for about 30 minutes just to soften them.
2. Sift the All Purpose Flour along with the Baking Powder and the Baking Soda.
3. Press down on any lumps.
4. Make a paste of the Dates using as little water as possible either in a blender or a food processor.
5. Melt the butter so it is soft and mix it to the dry ingredients (flour, baking soda & baking powder).
6. Mix in the Dates paste and the Sweetened Condensed Milk. Mix well.
7. Fold in the Walnuts as well.
8. Spray/Grease a baking pan and pour the batter into it.
9. Bake in a pre-heated oven (350 degrees F) for 40 minutes in the center of the oven.
10. Once done, take the cake out and allow it to stand for 5 minutes before taking it out of the pan.
11. Loosen the edges and flip the cake onto a cooling rack.

Mango Mousse

Ingredients:

Mango puree: 2-½ cup
Icing sugar: 4 tbsp
Heavy whipping cream: 1 cup
Gelatin: 3tsp


Method:

Add 2 tsp of water and dissolve the gelatin, microwave for 30 seconds or until it dissolve.
In a blender jar, add the mango puree, sugar, gelatin and run for 1 min.
Add the whipping cream and blend together just few seconds.
Pour into small ramekin or custard cup;
Chill the cups for at least 4 hours

Rasmalai

Ingredients

Ricotta cheese: 1 qt
Sugar : ½ qty of ricotta

Method:
Mix and bake at 375 for 40 to 45 min.
close with foil while baking.
Let it cool once done.
Mix remaining sugar with half and half milk and pour it on cubes.

Kulfi

INGREDIENTS (20servings)

 Evaporated milk: 12 oz
 Sweetened condensed milk : 14 oz
Heavy whipping cream : 16 oz
Cool whip whipped topping: 16 oz
4 slices of white bread, torn into pieces (optional)
Ground cardamom : 1/2 tsp
Sugar : 1 tsp
Coarsely grounded nuts  : 1 tbsp (optional)

DIRECTIONS


1. Combine sugar, evaporated milk, condensed milk, heavy whipping cream and whipped topping in a big bowl.  Using electric hand blender or by hand gently mix all the ingredients together.Blend in pieces of bread .
2. Add in elachi powder and nuts. Mix well.
3. Pour into baking dish or plastic ice cube trays or into dixie style plastic cups.
4. Freeze for 8 hours or overnight.

Super moist home made Apple cake

Ingredients:

All purpose flour/maida : 3 cups
eggs : 3
sugar : 1.5 cups (alter according to your taste)
vegetable oil: 1.5 cups
baking powder: 1/2 tsp
baking soda: 1/2 tsp
vanilla extract: 1 tsp
milk : 1 tbsp
salt: a pinch
apples (peeled & cut into small pieces): 2 (I used Gala apples)
nuts(optional): 1 cup


Method:

  • Beat milk, eggs, sugar, baking soda, baking powder, salt, oil and vanilla extract together.
  • Then add flour slowly while beating the other ingredients and avoiding lumps.
  • Once the cake mix is smooth, then fold in apple pieces and nuts into the cake mixture.
  • Grease baking pan generously with oil/butter/ghee and pour the cake mixture.
  • Preheat the oven to 350 F and bake for 40 - 45 min.
  • Insert a took pick into the cake and if it comes our clean, your cake is ready to eat. yumm.............

***** I am not a big fan of nuts, so I always bake the cake without nuts. You can add grated carrot instead of apples and add a pinch of cinnamon if you need a flavour ******

Kalakand

Ingredients:

Ricotta Cheese - 15oz
Condensed milk- 14oz
Carnation Milk Powder- 3.5 oz
Unsalted butter - 1 stick

Method:

Mix cheese, condensed milk, milk powder very well in microwave safe bowl. Place the butter stick on top of the mixture. Microwave it for 5 min and remove and mix it well and again microwave. Cook until the mixture turns into brown color.

Apply some butter on to the pan and pour the mixture on it. Cool it and cut the kalakand into pieces. garnish with nuts.

Carrot Cake

Ingredients:
4 Eggs
1/2 Cup White Sugar
1/2 cup Honey
1 Cup Vegetable Oil
2 Cups All Purpose Flour
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1 tsp. Salt
3 Cups Grated Raw Carrots
1/2 Cup Finely Chopped Nuts (optional )

Method:

Beat eggs well in a large bowl, and add sugars in gradually, beating until light. Beat in oil. In a separate bowl, mix flour, baking powder, baking soda, salt. Stir into egg mixture. Stir in carrots, raisins and nuts(optional). Pour into a greased and floured 13X9 pan, and bake in a 350 degrees oven for 35-40 minutes.

Pineapple Pudding

Ingredients:

Condensed Milk- 1 Can
Crushed Pineapple- 1 can
Whipped Cream- 1 Can
Nuts for garnishing- Optional

Method:

well....well.....well........ here comes the hard part...

I like to do this when I am absolutely lazy and yet like to feast myself.

Mix all the ingredients together and put it in the refrigerator for at least 3 hrs. Serve chilled. Garnish with nuts(Pista, walnuts, etc...)

Substitute: Substitute Pineapple with mashed fresh strawberries. mmm........ yummy.........
